Jook or Congee is a classic Chinese breakfast made by cooking rice and stock together. This is the basic rice porridge recipe I learned from my father that I grew up eating as a child. I use the term "basic" because it is comforting as is but also has a lot of potential to be elevated by adding other toppings/flavors. I find that this dish is extremely comforting when you are feeling sick, or during the winter months.
