Everyday Asian Cabbage Salad with Sesame Ginger Dressing
This cabbage salad is colorful, crunchy, and full of flavor. It's just as pretty to look at as it is to eat. The fresh sesame-ginger dressing is inspired by asian flavors (ginger + garlic) and make this salad something you'll want to eat everyday.
Peel and shred 1 cup of carrots (if not already pre-shredded!)
Finely chop the cilantro (no need to discard the stems!)
Thinly slice the green onions
Roughly chop the cashews or almonds
Cook the frozen edamame according to the instructions on the bag. Allow the edamame to cool down before adding to the salad.
MAKE SESAME GINGER DRESSING
Combine all of the ingredients in the ginger dressing into a mason jar. Cover with a tight-fitting lid and shake the jar vigorously to combine. Taste and add salt, if needed.
ASSEMBLE THE SALAD
Add the coleslaw, carrots, bell pepper, cilantro, green onion, edamame, and nuts into a large bowl. Use a pair of tongs to toss until combined.
When serving, drizzle dressing over the salad and top with a sprinkle of sesame seeds.
