Summer time is here and I couldn’t be more excited for camping, picnics, and road trips! If you’re looking for a quick, easy, and delicious way to prepare make-ahead meals then these foil packets are a must try.
For people with celiac disease, navigating social situations that involve eating (which is basically all events) can be tough. Not only do they have to be conscious about eating strictly gluten free, but they also have to worry about cross contact with gluten-containing foods. Grills are a hot-spot for cross contact! These foil packets are a wonderful dish to bring to a backyard barbecue or camping trip because the foil eliminates the worry about cross contact on the grill.
Celiac Pro Tip: Not all Sausage is Gluten Free
Choose a sausage that is labeled “gluten-free” (many companies use wheat-based fillers).

Celiac Pro Tip: Not all Spices are Gluten Free
For a spice to be considered celiac-safe, it doesn’t necessarily need to be labeled “gluten free.” Single-ingredient spices (like paprika, cumin, oregano, salt, etc) are at low risk of cross contamination. Spice blends, however, need to be verified that they do not contain any gluten sources.
Takeaway: You can buy gluten free spices if you want to (or if it helps with stress/anxiety levels), but it isn’t 100% necessary. If you notice that you are cooking gluten free meals and still having reactions, then maybe consider spices as a hidden source of gluten (and purchase labeled gluten free spices).

Sausage & Potato Foil Packets

Ingredients
- 12 ounces smoked sausage (gluten free, cut into 1-inch pieces)
- 1-½ pounds baby yukon gold potatoes (cut into 1-inch pieces, sub russet, yellow or red potatoes)
- 8 ounces green beans (trimmed and cut in half)
- 2 tablespoons unsalted butter (melted and cooled, sub olive oil)
- 1 tablespoon cajun seasoning (gluten free)
Cajun Seasoning (~1 tablespoon)
- 3/4 teaspoon paprika
- 1/2 teaspoon garlic
- 1/2 teaspoon Italian seasoning
- 1/2 teaspoon salt (optional)
- 1/4 teaspoon cayenne pepper (optional)
- 1/4 teaspoon dried thyme
- 1/4 teaspoon onion powder
Instructions
Preparation
- Prepare 4 (8×8-inch) sheets of heavy-duty aluminum foil and set aside.
- Cut the potatoes, sausage, and green beans (as noted in the ingredients list). Be sure to cut the potatoes into small (~1-inch) pieces so that they can cook quickly and evenly. Green beans cook much more quickly than potatoes so they can be cut into larger pieces.
- Add the sausage, baby potatoes, and green beans into a large mixing bowl. Sprinkle the Cajun seasoning and butter (or oil) and stir to coat everything evenly.
- Divide the sausage and potato mixture between the 4 pieces of foil. Fold each piece of foil in half and crimp the top edge closed. Then crimp the left and right sides closed so that you end up with a foil packet that is completely sealed.
Cooking – Grill
- Heat an outdoor grill to medium-high heat. Allow the grill to preheat for 10-15 minutes.
- Place the packets on the grill. Cover and grill until the potatoes are tender, about 20-25 minutes. Be careful when opening the packets as the contents inside will be very hot.
Cooking – Oven
- Preheat the oven to 425F and cook for 20-25 minutes on a baking sheet.
