Made with three real food ingredients, rice, lime, and cilantro this cilantro lime rice is a delicious and healthy side dish perfect for Mexican bowls. The secret to fast and easy cooking is…a rice cooker. Rice cookers are one of my favorite tools to use because they save the most time (+ they are more versatile than you might think).
What You’ll Need For This Cilantro Rice
- Rice – Any type – white, brown, jasmine, long or short grain – will do
- Cilantro – fresh is best!
- Lime – fresh is best!

How To Store Cilantro Lime Rice:
Allow the rice to cool slightly before transferring into a container with a lid. Store in the refrigerator for up to 5 days.
How To Reheat Cilantro Lime Rice:
Microwave: Add desired amount of rice to a bowl and a small bit of water (~1/4 teaspoon). Then, microwave in 30 second intervals until warmed through (time may vary depending on microwave wattage).

Cilantro Lime Rice
Ingredients
- 1 1/2 cups long-grain white rice
- 2 1/4 cups water (adjust depending on type of rice)
- 1 teaspoon lime zest
- 1/4 teaspoon garlic powder (optional)
- 1/2 teaspoon salt
- 1 tablespoon lime juice (one lime)
- 1/3 cup cilantro leaves (chopped)
Instructions
- Add grains to the pot of a rice cooker. Fill the pot with water and rinse until the water runs clear. To the rice, add the water, garlic powder, salt, and zest.
- Press cook
- When the grains are done cooking, let them sit for 10 minutes before fluffing with a fork. Add the lime juice and cilantro leaves and stir.
