Typically soy sauce is made from combining soybeans and wheat and allowing them to ferment together. For this reason, many brands of soy sauce are not gluten free.
Soy sauce and tamari are very similar – they are both derived from fermented soybeans. Tamari contains more soybeans per volume, so (while they are generally considered to be interchangeable) tamari will have a richer soy flavor.
