Mirin (also known as sweet cooking rice wine) is a common ingredient used in Japanese cooking. It is sweet and syrupy and is more often used in marinades, seasonings, and glazes. Mirin is similar to sake, but it has a higher sugar content and lower alcohol content.
Sometimes mirin can be made with a koji made from barley, so always double check the label before buying!
